This outdoor cooking and foraging experience combines a guided foraging hike with a full three-course meal prepared entirely over an open fire. You learn how to identify edible plants, understand seasonal ingredients and control heat for cooking over flame — all under professional guidance.

Before we cook, we learn to create fire the traditional way – using a fire steel and natural tinder.

The experience is practical, social and grounded in real technique. It is designed for beginners, families and outdoor enthusiasts who want a meaningful day in nature without committing to a survival course.

Small groups ensure personal guidance and a calm atmosphere. No previous experience is required.

Guided Foraging Hike in the Swedish Forest

After transport from our office in Södermalm, after a short introduction to fire safety, we practice lighting a fire using a traditional fire steel and natural tinder. Working in small groups, you learn how to create a sustainable flame – one of which becomes the main cooking fire for the day.

During this foraging experience, you learn how to identify edible plants, seasonal herbs and mushrooms depending on the time of year. The focus is on safe identification, understanding ätliga växter, and learning how to use wild ingredients in outdoor cooking.

You will:

  • Learn basic foraging principles

  • Identify edible wild plants and herbs

  • Understand seasonal forest ingredients

  • Experience Swedish friluftsliv in practice

The hike is purposeful and educational, setting the foundation for the cooking session that follows.

Matlagning över Öppen Eld – Fire and Outdoor Cooking Skills

When we arrive at our forest base — equipped with benches, tables and modest shelter in case of rain — the focus shifts to fire and outdoor cooking.

You learn how to:

  • Build and light a safe cooking fire

  • Select suitable wood for matlagning över öppen eld

  • Prepare wood in appropriate sizes for controlled heat

  • Create heat zones for different dishes

  • Adjust pot height and manage temperature

This is a hands-on outdoor cooking experience. Participants assist in preparing wood, managing heat and supporting the cooking process under professional guidance.

All techniques are explained clearly, so you leave with practical knowledge you can apply independently. 

This experience is not only about preparing a meal outdoors. You will learn how to light a fire using a traditional fire steel, how to prepare natural tinder, and how to manage a cooking fire safely and efficiently. These are fundamental outdoor skills rooted in Scandinavian outdoor culture.

Three-Course Open-Fire Meal with Local Ingredients

This outdoor cooking and foraging experience includes a full three-course menu cooked entirely over open flame.

The meal combines:

  • Wild ingredients from the foraging hike

  • High-quality local produce

  • Meat sourced from a local Swedish hunter

  • Vegetarian alternatives available

Cooking over fire requires coordination, timing and attention. You are invited to participate in preparation, fire control and plating.

A local Swedish beer is available to complement the meal.

The result is a shared forest meal prepared with your own hands.

Our culinary approach is rooted in the rhythm of the Swedish wilderness. We prioritise seasonal and local ingredients, which means our menu remains fluid and authentic to what the earth provides at that exact moment. Because the forest is ever-changing, no two meals are identical; we adapt our recipes to highlight the freshest produce available.

In the early months of the year, foraging in Stockholm is a subtle art, focusing on hardy herbs and vibrant green accents that provide sharp, fresh notes to our dishes. As the Swedish summer takes hold, the forest becomes more bountiful. Flavours intensify, and our foraged finds transition from simple garnishes to central components of the meal.

Sample Forest Menu: A Taste of the Wild

Below is an example of a three-course open-fire meal. While the specific ingredients shift with the seasons, this menu represents the quality and technique you can expect from our outdoor cooking experience.

Starter: Flame-Kissed Vegetable Soup

A hearty, slow-simmered soup crafted from locally sourced vegetables. We cook this over a steady open flame to deepen the earthy flavours, finishing the dish with foraged forest herbs and spices. For a unique texture, we top it with crispy fried lichen—a salty, brittle delicacy that offers a true taste of the Scandinavian woods.

Main Course: Wild Nordic Moose & Juniper

Experience authentic Swedish flavours with locally sourced wild moose, seared over high heat and cooked until perfectly tender. The meat is paired with a rich butter sauce infused with hand-crushed juniper berries gathered from the nearby landscape. This is served alongside pan-fried potatoes and seasonal greens, caramelised over the embers and seasoned with wild forest aromatics.

Dessert: Fire-Baked Apple Crumble with Smoked Cream

For the final act, we prepare a warm apple crumble, allowing the fruit to soften and the topping to crisp over the gentle heat of the fire. It is served with house-smoked vanilla cream, infused with wild blueberries and decorated with delicate, forest flowers for a fragrant, sweet finish.

To Drink

To complement the flavors of the fire, we serve Apple juice and Local beer. The experience concludes traditionally with Kokkaffe (steeped wood-fired coffee) or a seasonal herbal infusion crafted from plants gathered in the forest.
